Slaughter organisation and inspection

The official consolidated slaughter organisation rules, Order No. 7-1/370 require examination before slaughter and veterinary-sanitary examination of carcasses and organs afterward. They address animal documentation, identification, inspection records and registered slaughter premises. The order is dated 27 April 2015; the reviewed text includes amendments made by Order No. 15 of 23 January 2025. Ask the regional veterinary authority to confirm the facility registration and record procedure for the intended operation.

Pig operations in the facility requirements

The consolidated facility requirements, Order No. 7-1/832 include pigs explicitly: scalding, bristle removal, scraping and singeing are among the operations to be separated to prevent meat contamination. The document also addresses carcass suspension, tool sanitation, veterinary work areas and condemned-material collection. The order is dated 18 September 2015; the official text is marked as updated. Apply the clauses for the correct type of slaughter premise rather than mixing provisions for different facility categories.

A withdrawn control document should not be used as the current basis

Order No. 7-1/347 of 20 April 2015 is still reproduced on some government resource pages. Order No. 178 of 24 May 2024 withdrew it with effect from 8 June 2024. Its old control checklist is therefore not presented here as current law.

  • Provide an arrival/document-check point and animal examination access before the slaughter route. Keep an identifiable route for animals retained for veterinary decisions.

  • Maintain carcass and organ identity through the inspection positions. Show where material can be retained and how condemned material leaves without entering dispatch.
  • Prepare site-specific winter and summer utility assumptions, including heating, water supply protection, refrigeration loads and electrical continuity. Have the local building/services engineer validate them.

  • Which registered-premise category applies to the planned pig facility and what registration documents and inspections are currently required?
  • Which veterinary documents and animal-identification records are required from each supply source?
  • Which inspector-approved arrangement is needed for carcasses, organs, record entry and veterinary decisions?
  • Which local environmental, building, heating and wastewater conditions must be incorporated before machinery is ordered?
